Really lovely biscuits with just a bit of sugar free jam on top, made with ground almonds and dessicated coconut. Super easy to make and the perfect biscuit with a tea or coffee. You can top it with any flavour jam of your liking, these ones are filled with blackberry jam

PREPARATION & COOKING TIME: 25 mins
INGREDIENTS for 12 biscuits:
100gr ground almond flour
50gr dessicated coconut
1/4 tsp salt
1 egg, beaten or 1 flax egg (1 tbsp ground flaxseed in 3 tbsp water or milk of your choice)
2 tbs honey
2 tbs coconut oil
1 tspn baking powder
- preheat oven at 350F/ 175C
- place the almond flour, oat four, salt, dessicated coconut and baking powder in a medium bowl and mix well with a wooden spoon
- now add the coconut oil, egg and honey and mix well
- divide the mixture into 12 equal pieces, form them into a ball
- place the balls on a baking tray with baking paper at the bottom and with your thumb, make an indent in the middle
- place a little of the jam in each hole
- cook in the oven for 13-15 minutes, until golden at the top
