tomato sauce

This is a very basic tomato sauce that I use to eat with pasta, to top on pizza or to use in cannelloni or other oven baked pastas.

Cooking time and preparation: 45min

Ingredients for 5 portions:

1 onion, chopped

2 cloves of garlic, chopped

1 carrot, chopped

1/4 bunch basil, chopped

400ml passata

1 teaspoon salt

  • In a medium pot, place olive oil, chopped carrots, onions and garlic and sauce on low heat for 5 mins or until onions become translucent
  • add the pasta and salt and bring to boil
  • then lower the heat and simmer for 20-25 minutes or until you see the oil coming up to the surface

  • cool down and then either refrigerate or place in freezer for further use
