This gluten free, dairy free, paleo pizza is really delicious. The ground almonds give it an al dente texture and it is great for a kid’s party! They will never know they are eating cauliflower!
Preparation time: 1hr 15mins
For the Pizza Base 6 slices:
1 medium cauliflower or 1 tub cauliflower rice/couscous
2 eggs or 2 flax eggs (2 tbsp flaxseed in 6 tbsp water)
100gr ground almonds
1/2 tsp salt
1tsp dried oregano
100gr tomato sauce
1 mozzarella sliced
any toppings that you like
- preheat oven at 375/175C
- cut cauliflower into pieces and wash
- place florets in a food processor and shred
- then place the cauliflower on a tray with greaseproof paper and cook in oven for 15 mins
- take out of oven to cool and increase oven temperature to 470/245C
- once cool place the cauliflower into a muslin or kitchen clots and squeeze out all the excess liquid
- place the cauliflower in a bowl, add the ground almond, eggs/ flax eggs, salt and oregano a mix well
- take a pizza tray or a normal rectangular tray, line it with greaseproof paper and place the pizza base mix in it.
- distribute all over the tray and press down with the back of the spoon to make it more compact
- place in oven for 15 mins untill brown
- top with tomato sauce, mozzarella and any other topping of your choice
- place back in oven for 8-10 minutes
- cut into slices and enjoy
