This bread recipe is keto and paleo friendly, no carbs and made with ground almonds and cream cheese. As there is no flour, it is also gluten free, yeast free and super easy to make. I really liked it, it is more like a cake consistency rather than proper bread, so will try soon a yeast recipe. Stay tuned for any recipe development, but in the meantime this is avery satisfying bread, especially with a layer of butter and slice of cheddar on top.
PREPARATION & COOKING TIME: 40mins
INGREDIENTS for a 2lb loaf/ 10 slices:
200gr cream cheese
50gr full fat skyr yoghurt
2 eggs, beaten
1/2 teaspoon himalayan salt
2 tablespoons ground flaxseeds
150gr ground almonds
1 teaspoon baking powder
- preheat oven at 350F/ 175C
- with an electric whisker or in a robot, blend the cream cheese, yoghurt and gradually add the eggs
- in the meantime mix the ground almonds, ground flaxseeds, salt and baking powder and then add to the wet mixture and combine well
- pour mixture in the loaf tin and bake in the oven for 35mins or until a toothpick comes out clean
- let it cool and then you can pre-cut into 10 slices and then freeze and defrost as and when
