keto bagels

When you are on a keto diet, you do miss bread every now and again. These bagels are keto friendly, low carbs and made with ground almonds and grated mozzarella. They are also gluten free, yeast free and super easy to make. This is a very satisfying bread, that you can fill with anything you like and top with anything you like. I topped some of them with zaatar and some I left plain

PREPARATION & COOKING TIME: 40mins

INGREDIENTS for 4 large or 8 small bagels:

200gr mozzarella grated

1 egg, beaten

1 tbsp ground flaxseeds

1 tbs yoghurt or cream cheese

100gr ground almonds

1 teaspoon baking powder

  • preheat oven at 350F/ 175C
  • microwave the mozzarella cheese and the yoghurt/cream cheese, until melted or melt on bain marie (I don’t have a microwave)
  • in the meantime mix the ground almonds,  flaxseeds and baking powder 
  • once mozzarella is melted add the egg and the flour mix and mix well
  • divide the mixture into 4, roll into a sausage shape and mould into a bagel form pressing the ends together
  • place the bagels on a baking tray lined with baking paper and top with the zaatar or your preferred topping (sesame or poppy seeds are quite nice)
  • place in the oven for 20-25 mins or until nice and golden
  • cut in half and fill with your favourite filling, savoury or sweet
