This is a really fluffy bread made only with seed flours and therefore gluten free and paleo friendly. You can either make it flatter by using a bigger loaf tin or higher to make it look like a loaf of bread. This bread will not raise a lot, so it can be on the dense side, but the olive oil and the flaxseeds create a very soft and fluffy consistency
Ingredients for a 2lbs loaf/ 10 slices:
100gr teff flour
80gr ground flaxseeds
40gr almond flour
20gr psyllium husk
1tsp baking powder
1tsp bicarbonate soda
1tbs apple cider vinegar
1 egg, beaten
2tbs olive oil
280gr water
30gr sunflower seeds for the topping
- Preheat the oven at 170 C/ 325F
- Place the flours in a big bowl and add in the sifted bicarbonate and baking powders. mix well with a spatula
- In a separate bowl, combine the vinegar, water, egg and olive oil
- Create a hollow in the centre and add the wet ingredients to the flour mix, mixing well
- Oil and gas 2lbs loaf tin and place the mixture, flattening with the spatula and then with wet hands
- Top with the sunflower seeds and place in the oven
- Cook for 45mins or until a skewer comes out clean from the centre
- As soon as it is cooled down, you can cut into 10 slices and freeze or place in fridge to keep the freshness for longer
