This is a really fluffy bread made only with seed flours and therefore gluten free and paleo friendly. You can either make it flatter by using a bigger loaf tin or higher to make it look like a loaf of bread. This bread will not raise a lot, so it can be on the dense side, but the olive oil and the flaxseeds create a very soft and fluffy consistency

Ingredients for a 2lbs loaf/ 10 slices:

100gr teff flour

80gr ground flaxseeds

40gr almond flour

20gr psyllium husk

1tsp baking powder

1tsp bicarbonate soda

1tbs apple cider vinegar

1 egg, beaten

2tbs olive oil

280gr water

30gr sunflower seeds for the topping

  1. Preheat the oven at 170 C/ 325F
  2. Place the flours in a big bowl and add in the sifted bicarbonate and baking powders. mix well with a spatula
  3. In a separate bowl, combine the vinegar, water, egg and olive oil
  4. Create a hollow in the centre and add the wet ingredients to the flour mix, mixing well
  5. Oil and gas 2lbs loaf tin and place the mixture, flattening with the spatula and then with wet hands
  6. Top with the sunflower seeds and place in the oven
  7. Cook for 45mins or until a skewer comes out clean from the centre
  8. As soon as it is cooled down, you can cut into 10 slices and freeze or place in fridge to keep the freshness for longer
