
This is a very easy to make salad, fresh and filling at the same time. I peel and de-seed the cucumber as it is easier to digest for me, but you can serve it whichever way you want it. Also there are no salad leaves, just 7 ingredients: black olives, cucumber, tomatoes, red onions, feta cheese, olive oil and oregano. This greek salad is gluten free.
PREPARATION & COOKING TIMES: 10 mins
INGREDIENTS for 2 people:
200gr feta cheese
150gr kalamata or black olives
1 red onion, sliced finely
400gr tomatoes, chopped roughly
1 teaspoon dried oregano
1/2 teaspoon salt
2 tablespoons extra virgin olive oil
- combine all ingredients together and serve with gluten free pitta bread
