choc kidney beans brownie

So I love brownies, they are the one thing that hits the spot when i fancy something sweet, so i am constantly on the lookout for a healthier recipe. Well it does not get healthier than this!! The main ingredient in this recipe is…….. red kidney beans, it is egg free, sugar free, dairy free, gluten free and almost flour free. and because I cannot eat nuts, this is the best recipe if you cannot have a paleo brownie. The result is a creamy, moist brownie with the advantage of healthy ingredients: red kidney beans are high in proteins, fibre, phenolic acid (anti-inflammatory, anti-carcinogenic, anti-oxidant) and a great source of potassium, iron, magnesium, manganese and phosphorous. PREPARATION & COOKING TIME: 40mins

INGREDIENTS FOR 12 BROWNIES:

460gr organic canned red kidney beans, drained and rinsed well

80gr coconut oil

80gr oat flour

50gr raw cocoa powder

60gr xylitol

20gr stevia

1 teaspoon baking powder

1/2 teaspoon salt

2 teaspoons vanilla extract

20gr pine nuts

30gr goji berries

  • preheat oven at 350F/ 175C
  • combine all ingredients (except goji berries and pine nuts) in a food processor and blitz until you get a smooth consistency. I have tried with mini-piper and it works well with that as well
  • line with baking paper a 8″x8″ baking tray
  • place the brownie mixture in the tray and smooth the surface
  • top it with the goji berries and pine nuts
  • place in oven for 25-30 minutes
  • once cooked, take out of oven and cool down
  • once cooled place in fridge and cook into 12 squares straight from fridge
  • serve with coconut yoghurt or ice cream
