spinach & feta borek

As you can see I am on a roll with the gluten free pastry Jus Rol!! I find it makes such an easy meal and here is a savoury version and take on the Turkish Borek dish. I added a bit of ricotta and nutmeg as it goes very well with spinach. You can eat this dish warm from the oven or cold the day after, it is equally delicious. I served it with a red pesto pepper sauce! Delish J

PREPARATION & COOKING TIME: 1 hour

INGREDIENTS for 6 generous slices:

1 pack of Jus Rol gluten free puff pastry

300gr frozen spinach

ΒΌ  tspn ground nutmeg

100gr ricotta

200gr crumbed feta

10gr butter, room temperature

1 tspn salt

  • Saute the frozen spinach in a little olive oil and once all the excess water has evaporated, set aside to cool
  • preheat the oven at 200C/ 375F
  • Add to the spinach the salt, nutmeg, ricotta and feta and mix well
  • Roll out the puff pastry and place the spinach mix in the middle
  • wet your finger and run it on the edges of the pastry
  • roll the pastry and seal the edges and tuck the edges in
  • turn it over so the sealed side is bottom down
  • with your fingers, spread the butter on top of the pastry and prick the top with the knife to let the steam out
  • cook in oven for 30 minutes
  • cool down then cut into 6 equal slices and serve with salad, and any sauce you prefer
