elderflower cordial

elderflower cordial, gluten free

This is a very seasonal thing and the elderflowers are out now so hurry! A delicious cordial that you can enjoy with prosecco, white wine, cocktails or simply water. It keeps for a while due to the high levels of sugar, but I can guarantee you that it will not last long.

COOKING & PREPARATION TIME: 10mins + overnight

INGREDIENTS for 6 pints:

20 heads of elderflowers

1.75 kg caster sugar

2 lemons

50gr tartaric acid

  • Before making the cordial you need to bring to boil 3 pints of water and then let them cool down to room temperature
  • place the elderflowers in a bowl
  • add the tartaric acid (click here to buy it online)
  • add the sugar 
  • cut the lemons in half, squeeze the juice in and cut the lemons in quarter
  • add the cooled down water and stir well, until sugar dissolved
  • keep stirring a few time
  • cover with lid and leave overnight
  • then sift through a sieve with a muslin in it and squeeze all the cordial out
  • place in a small sealable jar, let it cool and then keep in the fridge
