keto bread broccoli & cheese

This is a very tasty savoury bread, made with leftover broccoli and cheddar cheese. You could also use grated courgettes or cauliflower and obviously also different cheeses, pretty much anything you fancy.

PREPARATION & COOKING TIME: 45 mins

INGREDIENTS FOR A 2lb loaf/ 10 slices:

200gr broccoli, cooked and mashed

100gr grated cheddar

50gr grated parmesan

150gr ground almonds

1.5 tspn baking powder

1/2 tspn salt

2 eggs, beaten

130gr cream cheese

  • preheat oven at 350F/ 175C
  • butter or oil a 2 lb loaf tin
  • mix the ground almonds, parmesan, baking powder, salt in a bowl
  • in another bowl mix the cream cheese, eggs, based broccoli and cheddar
  • pour the egg mixture into the ground almond mixture and stir well
  • pour the mixture into the tin loaf and cook in oven for 40-45 mins, or until a toothpick comes out clean from the middle
  • cool and either pre-cut the loaf and then freeze or eat all at once
