These are very simple and tasty almond cake topped with fresh peaches. This recipe is gluten free, sugar free and vegetarian. The almond flour makes the cake very fluffy and moist, so the overall effect is delicious. You can substitute with any other fruit of your liking.
COOKING & PREPARATION TIME: 45 mins
INGREDIENTS for a cake of 8 portions:
200gr ground almonds
50gr gluten free flour
200gr butter, room temperature
50gr xylitol
1 tspn vanilla essence
1/2 tspn xanthan gum
2 tspn baking powder
3 eggs, beaten
300gr peaches (2 peaches), cut into 8 wedges
- preheat oven at 350 F/ 175C
- oil and line a 20cm cake tin
- whisk the butter with a spatula
- mix in a separate bowl the almond flour, gluten free flour, xylitol, baking powder and xanthan gum
- add the dry ingredients to the wet ingredient
- add the eggs and vanilla essence and mix with a spatula
- place the cake mix into the cake tin, level with spatula and top with the peaches wedges
- bake in oven for 30-35 mins or until a toothpick comes out clean
