sweet potato fries

Sweet potatoes have low GI index so they release sugar in blood steadily rather than giving you a sugar rush. The fries are done under the grill, so they are super quick to make and very yummy!

PREPARATION & COOKING TIME: 30min

INGREDIENTS FOR 4 PORTIONS:

2 medium sweet potatoes

4 tablespoons of extra virgin olive oil

1 teaspoon cajun spice

1/2 teaspoon sea salt

  • turn the grill on at full heat
  • wash the sweet potatoes and scrape them with a metal scourer
  • cut the potato into fries size, keeping the skin on
  • place the fries in a medium bowl and add the salt, olive oil and cajun spice and mix well with your hands

  • place the fries on the baking tray, but place them in a good order and in lines, as easier to turn afterwards

  • place under the grill and watch until the brown, then turn them over on the tray and grill again
  • serve hot, with your favourite dish and accompaniments like mayo or ketchup
