pitta with falafels and kimchi

This is one of my favourite lunch meals, a pitta bread filled with humous, falafels, kimchi and some greens. This meal is packed with vegetable proteins and probiotics, very healthy and filling

PREPARATION & COOKING TIME: 10 mins if you have all ingredients (otherwise look at each recipe for times)

INGREDIENTS for 1:

1 gluten free pitta bread

3 falafels

1 tablespoon hummus

1 tablespoon kimchi

handful of fresh spinach leaves

  • place the pitta under the grill to toast
  • place the falafels under the grill to warm up as well
  • check the grill regularly and turn both falafels and pitta
  • once warm, cut the pitta bread in half lenghtwise
  • fill the pitta with humus, falafels, kimchi and the greens
  • eat warm
