pineapple salsa

This pineapple salsa is sweet and sour, bursting with flavour and perfect served with fish or jerk type meat.

PREPARATION & COOKING TIME: 45mins

INGREDIENTS: makes 1KG

1 medium pineapple

1 red pepper, chopped

1 red onion, chopped

1/2 bunch coriander, chopped

3 tablespoons white wine vinegar

  • prepare the pineapple by peeling it and slicing it
  • take a frying pan and place it on high heat, with nothing on it.
  • once hot, place half of the pineapple slices on the pan and grill each side. once brown and caramelised on both sides, remove from heat and allow to cool.

  • in the meantime, blend the rest of the pineapple with mini piper or the robot
  • place in a pot and cook on high heat, until it boils and then turn the heat to simmering. Reduce to half the volume (around 15 minutes), add the vinegar and cook for another 2 mins. Remove from the heat and allow to cool

  • now cut and chop the grilled pineapple, add the chopped onions, red pepper, coriander and finally add the pineapple puree. Mix well with a spatula or wooden spoon and keep in refrigerator until ready to serve
