maroccan lentil & sweetpotato soup

This is a very tasty and easy to make soup that I learned to make during my stay in morocco this Xmas! This recipe was made with puy lentils, but the original one was with green lentils, they both work well for it. This dish is gluten free, dairy free and vegan.

COOKING & PREPARATION TIME: 45mins

INGREDIENTS for 4 bowls:

2 onions, chopped

2 garlic cloves, chopped

1 tbsp parsley

3 tbsp extra virgin olive oil

1 tsp salt

1 tsp paprika

1/2 tsp cumin

1/2 tsp ground ginger

1/4 tsp ground cinnamon

1/2 tsp turmeric

1 tomato, grated

1/2 stock cube

2 ltr water

200gr lentils

200gr sweet potato, peeled and cut in small 1cm cubes

  • place the lentils ina tupperware and soak them in water
  • Put spices, onion, garlic and grated tomato in a medium pot with a cup of water (from the 2 ltr) and simmer for 5 mins.
  • Then add the remaining water, the lentils, stock cube and salt, cover with lid and simmer gently for 20 mins
  • add the olive oil now and the sweet potato, cover the pot with a lid and simmer for another 15 mins
  • keep stirring now and again and add water if need be
  • serve in a bowl with chopped parsley on top
