falafels, kimchi and hummus

This is a typical meal i have for lunch, light, packed with protein and nutritious. I have combined them together just to give you an idea of the combination of flavours, but you can easily put all of them in a pitta bread for a quick lunch that will keep you filled for a few hours. The falafels are made with sundries tomatoes instead of sweetcorn.

INGREDIENTS for 1 plate

4 falafels

50gr hummus

50gr kimchi

  • reheat the falafels and place on a plate with hummus and kimchi
  • serve with gluten free pitta bread
