basil pesto

This is a very simple pasta sauce, pungent, versatile and full of taste. It can be used as pizza base, to umpf a sandwich, to give extra flavour to savoury muffins. I always have it in the fridge as my “fast meal” option.

PREPARATION TIME: 5 mins

INGREDIENTS for 250gr:

3 bunches of basil (you can also use rocket or watercress)

1/2 teaspoon sea salt

1 clove garlic

20gr pinenuts

20gr parmesan or vegan version of parmesan

4 tablespoon extra virgin olive oil

  • place all ingredients in the robot or minipiper and whizz until all ingredients blended.

  • taste for salt and add if you prefer.
  • place in a glass jar with lid and keep in fridge
