baileys & coffee balls

This is a protein snack with a punch that can be kept in the fridge for 4-5 days. The ideal snack to have with a cup of tea or coffee instead of biscuits or cakes, which is my go-to snack. It only takes 10 mins to make and in this recipe I soaked the dates in 50ml of coffee and coated the balls in cocoa powder, but you can obviously change the coating as you best prefer.

This recipe is gluten free, dairy free, low carb, paleo and refined sugar free.

PREPARATION & COOKING TIME: 15 mins

INGREDIENTS for 8 balls (35gr each):

100gr dates

50ml espresso or strong coffee

100gr ground almonds

1 tsp coffee essence

2 tbsp ground flaxseeds

2 tbsp baileys 

10gr 100% cocoa powder- for coating

  • Soak the dates for a few hours with the coffee
  • Then place the dates, in a blender and turn into puree
  • Add all the other ingredients except for the cocoa powder and mix again
  • If need be, transfer in a bowl to mix thoroughly
  • Divide the mixture into 12 balls, roll with your hands
  • In a small plastic container, place the cocoa powder and roll the balls in it
  • Place the balls in a glass container and keep in fridge
