watermelon & feta salad, gluten free, low carb

This is a very easy to make salad, fresh and filling at the same time. The contrast between the salty feta and the sweet crunchy watermelon is a match made in heaven, then topped with fresh thyme and the dish becomes divine. This salad is gluten free.

PREPARATION & COOKING TIMES: 10 mins

INGREDIENTS for 2 people:

200gr feta cheese

1 red onion, sliced finely

400gr watermelon, cut into 2cm cubes

1 teaspoon fresh thyme 

1/2 teaspoon salt

2 tablespoons extra virgin olive oil

  • combine all ingredients together and serve with gluten free pitta bread
