vegan mushroom & cannellini burger

This is a very tasty vegan burger!! I have to say that I still have not found a good enough vegan burger out there, so finally I decided to do my own. This recipe makes 4, so I freeze the ones I don’t use for later on. It is a bit fidgety as it involves 2-3 procedures, but well worth it. So here is this gluten free, dairy free, vegetarian and vegan burger recipe

PREPARATION TIME: 10 mins

 COOKING TIME: 1 hour

INGREDIENTS FOR 4 PATTIES:

1 can cannellini beans

2 carrots

150gr mushrooms

100gr butternut squash

1 tsp smoked paprika

1 tsp salt

1 tsp  extra spicy Cajun spice

1 egg or 1 flax egg (1 tbsn flaxseed in 3 tbsp water)

50gr pesto (vegan version with nutritional yeast instead of parmesan)

  • Preheat oven at 175C/ 350F
  • Blend the butternut squash, mushroom and carrot in a robot until it is still coarse
  • Place the mix in a mixing bowl
  • Now mash the cannellini beans and add in the mixing bowl
  • Then add the spices, salt, egg/ flax egg, pesto and mix well
  • Mould into 4 patties and place in the oven on baking paper
  • Bake for 40-50 mins, making sure you flip them over half way
  • Serve as you wish
