upside down apple cake

This is a very easy to make cake, with only 5 ingredients, but super delicious. Also it contains no flour, just ground almonds, so it is low in carbs and paleo. This cake uses the creaming method, so you do need either butter or margarine. I have not tried this recipe with any nut butters, but i cannot see why it should not work.

PREPARATION & COOKING TIME: 1 hour

INGREDIENTS for a 22cm cake or 6 portions:

500gr apples (approx 4 apples), peeled and sliced lenghtwise

110gr ground almonds

110gr butter or margarine, room temperature

2 eggs, beaten

45gr xylitol

  • preheat oven at 350F/ 200C
  • in the meantime, steam the apples for 2 minutes, so that they just start to become soft

  • set the apples aside to cool down while you prepare the cake mix
  • place the butter/margarine in a bowl together with the xylitol and whisk until the butter/margarine becomes paler in colour and fluffy
  • add in 3 stages the beaten egg to the butter mix and whisk until well incorporated to the butter mix, before you add more egg. do not add too much egg at one time, or the butter mix will curdle
  • add now the ground almonds to the egg and butter mix and mix well with a spatula
  • oil  a 20cm round cake tin and arrange the apples slices into a spiral or rose shape or whatever pattern you like
  • cover the apples with the cake mix and spread evenly with a spatula

  • place in the oven and cook for 35-40 minutes
  • once cooked, cool down and serve with either coconut yoghurt, creme fruit or custard as you wish
