tapenade

Tapenade is a very rich Spanish sauce made with olives, sundries tomatoes, anchovies and garlic, so vary flavoursome. I use it as a pasta sauce, on pizza toppings and on sandwiches or pittas.

PREPARATION TIME: 10mins

INGREDIENTS makes 250gr:

120gr pitted green olives, either in jar or tinned

40gr sundried tomatoes

2 cloves of garlic

1 teaspoon capers

75ml extra virgin olive oil

2 anchovies fillets

  • place all ingredients in the robot and blend
  • put the puree in a glass jar and keep in the fridge
  • it will keep for 2-3 weeks
