Such an easy and tasty recipe for this lovely potato salad, ideal side dish that goes well with fish, meat, vegan & vegetarian mains. Try it, the gherkins really work well with the other dressings. Best to use new potatoes that are starchier. Enjoy it and let me know if you liked it or not.

PREPARATION & COOKING TIME: 40mins

INGREDIENTS for 550gr:

400gr new potatoes cut in same size as the smaller potato

1 tbps extravirgin olive oil

1 tbsp mayonnaire

1tbsp suma red pesto

75gr sliced gherkins

1 teaspoon salt

  • place the potatoes on a steamer and cook either on pressure cooker (10mins) or in a normal pot (25-30mins)
  • once cooked, keep to cool on the steamer for 5 mins
  • then place in a bowl and add the mayonnaise, suma pesto, salt, extravergin olive oil and sliced gherkins
  • mix well and serve as a side dish
