red cabbage coleslaw

This is a good recipe to eat raw red cabbage which is super nutritious and really good for you: it boosts the immune system, reduces arthritis inflammation, improves gut health and combats chronic disease. So the more in your diet, the better and remember to always chop your cabbage 40 minutes before cooking to get the best out of them. In this case the cabbage is raw, so you do not have to worry about that. This recipe is sweet and crunchy and super delicious

PREPARATION & COOKING TIME: 15 mins

INGREDIENTS for 8 portions

400gr red cabbage, finely sliced

1 apple, peeled and grated

2 stalks of celery, peeled and cut into strips

75gr cashew nuts, chopped

100gr coconut yoghurt

1 teaspoon horseradish sauce

40gr sultanas

  • combine all the ingredients together and mix well
