We have had a few days of very hot weather in London and this was a very cool and no-need-to-cook dessert, ideal for a summer day! This pannacotta is super creamy, made with lactose free mascarpone that I found in the supermarket and it is sugar free and gluten free. I served it with a teaspoon of Baileys on top, but you could also use a fruit coulis if you prefer. Very easy to make and hassle free. Will post the vegan version very soon!
PREPARATION & COOKING TIME: 10mins + 2 hours in fridge
INGREDIENTS FOR 3 PORTIONS:
200gr lactose free mascarpone
25gr xylitol
5gr stevia
3/4 teaspoon agar agar
3 tablespoons baileys
- in a small saucepan place the mascarpone, xylitol, stevia, vanilla and agar agar and stir until the mascarpone has warmed up and the sugars have melted.
- the temperature will have also melted the agar agar
- place the mixture in 3 ramekins and once cooled down, place in the fridge for 2 hours to firm up
- serve with one tablespoon of baileys on top
