paella

This dish was inspired by Paella and it is a very tasty, nutritious and filling dish that is easy to make. Traditionally, Paella has only chicken and rabbit meat, so technically I cannot call this dish Paella. But the name Paella gives the idea of the dish, the flavours are similar and the process virtually the same. I used organic short grain brown rice and it works a treat, then I added whatever I had in the house and some extra vegetables like courgettes, which are nowhere in the traditional Paella.

PREPARATION & COOKING TIME: 35min

INGREDIENTS FOR 4 PORTIONS:

300gr short grain rice

1/2 punnet cherry tomatoes, cut in half

400gr seafood

250gr frozen peas

1ltr vegetable stock

1 teaspoon salt

1 onion, chopped

2 cloves garlic, chopped

3 tablespoons extra vigin olive oil

1 teaspoon smoked paprika

1 pinch saffron

  • place olive oil in a large frying pan, preferably in in wrought iron, but otherwise a normal pan
  • start stir frying the onions, garlic and cherry tomatoes in the oil
  • when the onions become translucent, add the rice and soak up the oil
  • add the stock, saffron, salt and paprika and start cooking for 20 mins, without stirring
  • after 20 mins add the seafood, peas, courgette, stir gently and then leave to cook till the rice is cooked
  • taste for salt and add according to taste
  • serve directly from the pan to the table
