I love Nicoise salad! So easy to make and yet so tasty, filling and nutritious. I do not salad leaves, but only green beans, tomatoes, olives, jersey new potatoes, tinned tuna and boiled eggs. I use tinned tuna as I don’t like the fresh tuna, but feel free to use what you prefer. gluten free and dairy free
PREPARATION & COOKING TIME: 30mins
INGREDIENTS FOR 2 PORTIONS:
300gr jersey new potatoes
60gr pitted black olives
half punnet cherry tomatoes
1 tinned tuna
2 boiled eggs, cut in quarters
400gr green beans
3 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
1/2 teaspoon salt
- boil the new potatoes and once cooked, set aside to cool down
- in the meantime boil the eggs and cook the green beans
- once ingredients are cooled down, slice the potatoes
- assemble all ingredients together, apart from boiled eggs
- dress with olive oil and balsamic vinegar
- serve on a plate with the boiled egg
