
I like to make my own mincemeat, firstly because it normally contains suet and i prefer to do it with vegetable suet and secondly because I do not like candied peel in them, they never have enough booze in them and they also have a lot of added sugar normally, hence I make my own. It is very easy to make, but you have to prosaic the dried fruit overnight, so think ahead if you want to make your own
PREPARATION & COOKING TIME: 12 hours pre-soaking + 15 mins cooking time
INGREDIENTS for 5 jars (445gr):
350gr raisins
225gr dried currants
225gr sultanas
225gr vegetable gluten free suet
90gr toasted sliced almonds
juice and zest of 2 lemons
juice and zest of 2 oranges
90ml whiskey
450gr apples, peeled and diced
4 teaspoons all spice
1 teaspoon cinnamon
- prepare the jars by boiling a kettle and then pouring the boiling water on the jars and lids, then dry naturally
- soak the fruit overnight with the juices of the lemons & oranges and the zests
- then cook in a large pot the apples and suet, until the apples are cooked
- add to the soaked fruit, add the spices, almonds and whiskey and stir well
- distribute the mincemeat in between the 5 jars and close with lid tightly
