
This is a very easy and tasty recipe. Instead of using an egg or breadcrumbs I have used instead a flaxseed egg, that helps with the binding but also gives it a very soft consistency. Therefore the flaxseed egg replaces both egg and breadcrumb/ bread.
This recipe is packed with flavour, thanks to the parmesan, pesto and spices and it can be served with either a tomato or pepper sauce. The recipe is gluten free.
COOKING & PREPARATION TIME: 40mins
INGREDIENTS for 10 meatballs:
400gr minced beef
1 tbsn basil pesto
30gr grated parmesan cheese
1 tspn each of cajun spice, smoked paprika, onion & garlic powder
1 tbsn flaxseed (mixed into 3 tbsn water)
- Preaheat oven at 375F/ 175C
- In a large bowl, place the minced beef
- In a glass mix the flaxseeds with 3 tbsp water and set aside for 5 mins
- Add to the beef the parmesan, basil pesto, spices and the flax egg
- Mix well with hands and then form into 10 balls
- Place on a baking tray with greaseproof paper and cook in the oven for 15 mins
