mattar paneer

This is a delicious indian vegetarian dish made with peas, paneer/tofu, tomato sauce and ground almonds. It has a very delicate and creamy taste and it is best served with rice.

PREPARATION & COOKING TIME: 40 mins

INGREDIENTS for 4 portions:

1 tablespoon coconut oil

400ml tomato passata

1 small onion, chopped

2 cloves garlic, chopped

1 small turmeric root, grated (otherwise 1 teaspoon ground turmeric)

1 small piece of ginger, chopped

1 teaspoon garam masala

1 teaspoon ground coriander

1 teaspoon sea salt

3 tablespoons ground almonds

200 grams paneer or tofu, cubed

150gr frozen peas

100gr rice, washed in cool water

fresh coriander, chopped

  • take a medium pot, place the coconut oil and heat up the pot. Add the chopped onions, garlic, turmeric (only if you have the raw one) and ginger.

  • Saute for a couple of minutes, then add the tomato passata, the salt and the ground garam masala, ground coriander and ground turmeric (if you don’t have the raw one)

  • simmer on low heat for about 20 minutes or until you can see the oil coming up to the surface

  • while the tomato sauce is cooking, take a frying pan and lightly oil it and then brown the paneer/tofu cubes, then set aside to cool down
  • cook the rice that you previously washed, rinsed and covered in water. Bring water to boil, stir with a spoon and then cover till all the water is absorbed
  • once the tomato sauce is cooked, add the ground almond and stir. Taste the sauce for salt
  • add now the cubed paneer/tofu and the frozen peas and turn the heat off, the peas will just cook in the heat produced

  • add the chopped coriander
  • serve with the cooked rice
