Lemon cardamamon cake

This is a very moist and tasty almond cake, suitable for a Keto, low carb diet that is also gluten and sugar free. Very easy to make and versatile

INGREDIENTS for a 2 lbs loaf

180gr Philadelphia cheese

2 eggs

150gr ground almonds

30gr coconut flour

1.5 tsp baking powder

2 tbs ground golden flaxseeds

1 lemon zest and juice

5-6 cardamom seeds, ground

  • Preheat oven at 170C / 275F
  • butter a 2lbs loaf tin
  • mix the ground almonds, baking powder, flaxseeds, lemon zest and coconut flour
  • in another bowl mix the cream cheese with the eggs and the lemon juice
  • combine the dry to the wet ingredients
  • cook in the oven for 30-35mins or until a toothpick comes out clean from the middle
