Everybody knows guacamole, so I won’t bore you to explain it!! My first chef job, I was in charge of making buckets and buckets of guacamole, back in 1993 lol. so believe me when I say that I am pro on the matter. I like guacamole to be quite spicy, not only with chilli but with other spices like cumin, cajun and celery salt. I serve mine with either gluten free tortillas @marksandspencer or with the healthier version of corn or popcorn crisps. The choice is yours now!
PREPARATION & COOKING TIME: 15 mins
INGREDIENTS for 550gr:
2 ripe avocado, mashed with a fork
1 small red onion, diced very finely
1 garlic clove, chopped finely
1/2 teaspoon celery salt
1 teaspoon ground cumin
1 teaspoon cajun spices
1/2 lemon juice
1/2 bunch coriander chopped
2 small tomatoes, cut in quarters, deseeded and chopped in small squares
- combine all ingredients together and mix well
- taste for adding more spices or salt to your taste
- serve with tortilla chips and/or corn chips
- this is also a very good filling for burgers, sandwiches and salads
- if you have any left over (I doubt it!!), place in a glass container and even out at the top and add lemon juice to the top to prevent it going black, but it will only keep another day
