This is a very delicious recipe made with the butternut squash gnocchi recipe.
If you have the gnocchi mix already ready, this dish will take you less than 20mins to make as the sauce is super-fast and it is done while the gnocchi are cooking. I used Philadelphia light instead of cream to keep it lighter, but there are other 3 cheese in there, so there you go! Also try to use a smoked cheese in the mix as it adds extra flavour to the sauce.

INGREDIENTS for 2 portions:
Half (300gr) butternut squash gnocchi mix
180gr Philadelphia light
50gr grated parmesan
30gr gorgonzola
30gr smoked scamorza or applewood cheese
- Place water with 1 tbsn salt in a medium pot and bring to boil
- In a separate medium pan heat up the Philadelphia and once creamy add the other cheese and set aside
- When the gnocchi are ready, add them to the pan with a bit of the cooking water and mix well
