coconut macaroons

I looove macaroons, but the ones you buy in the supermarkets are so full of sugar, that I have no choice but to make them at home!! So here is a very good recipe for gluten free, sugar free and dairy free chocolate macaroons. However they are quite high in calories and fats, so eat with caution, if you can!

2 large egg whites
¼ teaspoon cream of tartar
45gr xylitol
30gr ground almonds
1 pinch of salt
1 teaspoon vanilla extract
250gr dessicated coconut

50gr 70% dark chocolate

  • preheat the oven to 170ºC/gas mark 3/325ºF.
  • beat the egg whites until frothy, then add the cream of tartar and carry on whisking until soft peaks are formed.
  • add the xylitol a teaspoon at a time and whisk until the peaks can hold their shape and are shiny.
  • fold in the almonds, salt, vanilla and coconut. The mixture will be sticky but still hold its shape when clumped together.
  • form into 12 similar balls, and place on a lined baking sheet.
  • cook for 20 minutes or until they’re just beginning to turn golden in parts.
  • set aside to cool down
  • in the meantime, place the chocolate in a pot and melt it under very low heat
  • dip the flat part of the macaroon in the chocolate and place on a  cooling tray to cool down
  • you can then drizzle the left over chocolate on top of the macaroons
