coconut chocolate bars

This coconut bars are sugar free, dairy free and glutne free. I really wanted something sweet and decided to make this lovely bars as I could make them just bite size enough to satisfy the sweet tooth! This recipe is also keto friendly and low carb and I chose 85% dark chocolate, but you can use whatever chocolate you prefer of course…. that is the beauty of making them yourselves.

PREPARATION & COOKING TIME: 40 mins

INGREDIENTS for 14 bars:

150gr dried coconut

1 teaspoon xanthan gum

50gr xylitol

50gr coconut oil

130gr coconut milk

 

for the coating:

100gr 85% dark chocolate

10gr coconut oil

  • in a small pot, heat up the coconut milk, coconut oil and the xylitol and set aside to cool
  • in a bowl mix the dried coconut with the xanthan gum and then pour the coconut milk mix over it.
  • mix well and place in fridge for 20 mins to set
  • once the mixture is cold, make the coating by melting the coconut oil and dark chocolate on a bain marie
  • then divide the mixture into 14 balls, flatten a little and then place in the chocolate and place to set in the fridge
