Chocolate mousse

This is a 4 ingredients chocolate mousse really easy to make and containing only 2 eggs! I say this because normally choc mousse have a lot of eggs and then you can taste them when you eat it.

PREPARATION & COOKING TIME: 10 mins plus 1-2 hours refrigeration time

INGREDIENTS for 4 pots:

150gr dark chocolate 80%

2 eggs, separate yolk from whites

50gr xylitol

100gr double cream

  • melt the chocolate and xylitol in a pot over Bain marie, stirring regularly
  • once the chocolate is melted, remove from heat. If chocolate overheats it clots, so make sure you remove from heat as soon as the chocolate is almost all melted, it will continue to melt once off the heat
  • set aside for at least 5-10 mins till it cools down
  • In the meantime whip the double cream with a wisk until it forms soft peaks. you only want it to start solidify and not properly whipped cream, otherwise the mousse will solidify too much
  • whisk the egg whites until you get very firm peaks. ( you can never overbeat egg whites)
  • add the double cream to the chocolate mixture and then add the egg yolk to the cooled down chocolate
  • fold the egg white very gently with a wide metal spoon so that you don’t loose the air bubbles
  • spoon the mixture into 4 ramekins and rest in the refrigerator
  • serve with berries and/or cream on top (optional)
  • if the mousse looks too hard in the fridge, remove from fridge 1 hour before serving and it will be smooth and silky
