
I am very particular about chocolate mousse and would rather eat the real thing once in a while than compromise with something else. However I discovered that I don’t do very well with chocolate and eggs together as maybe too rich for me and I really fancied chocolate mousse. So I tried to make a chia pudding and of course it has to be chocolate, gluten free, sugar free and dairy free as well as paleo and keto friendly and now I am pretty happy with the final result. Decadent and moorish and my tummy is happy as well. Use tinned coconut milk instead of the carton one as thicker and creamier
PREPARATION & COOKING TIME: 5mins plus overnight in fridge
INGREDIENTS for 6 ramekins:
1 tin coconut milk, with at least 40% coconut content. I used Grace coconut milk, it is the silkiest and creamier
70gr chia seeds
40gr xylitol
50gr coconut milk, from carton
1 tspn vanilla essence
- in a pot place the coconut milk from carton, xylitol and cocoa powder and heat gently for 2 mins until xylitol dissolved and cocoa powder incorporated
- in a large pot combine the chia seeds, tinned coconut milk and vanilla essence and mix well
- add the xylitol, cocoa powder and coconut milk mix, and mix well
- distribute into 6 ramekins and place in fridge overnight
- serve with berries and coconut yoghurt or whatever takes your fancy
