This is a gluten free version of the very famous biscuits typical from where I live. Traditionally you dip them in vin santo or fortified wine. This recipe has amaretto in it, to give it that extra almondy taste, but you can omit it. This recipe is sugar free, vegetarian, dairy free and gluten free.

PREPARATION & COOKING TIME: 45 mins
INGREDIENTS for 10 cantuccini:
50gr ground almond flour
100gr gluten free plain flour
1 tspn xanthan gum
1 egg, beaten or 1 flax egg (1 tbsp ground flaxseed in 3 tbsp water or milk of your choice)
1 tspn vanilla essence
1 tspn baking powder
40gr xylitol
75gr whole almonds or nuts of your choice (pistachios, walnuts, pecans, etc)
100ml water
25ml amaretto (optional)
- preheat oven at 325F/ 150C
- beat the egg with 2 tbsn water, amaretto and vanilla essence
- place the almond flour, gluten free flour, xanthan gum, xylitol, baking powder and whole almonds in a medium bowl and mix well with a wooden spoon
- add the egg/ flax egg and mix with the wooden spoon until you get a ball, adding water as needed
- place the ball on a baking tray with greaseproof paper on it and shape into a flat rectangle
- cook in the oven for 17-20 minutes, until golden at the top
- take out of oven and cut into 10 equal slices
- place the slices on the baking tray and bake for another 7-10 minutes or until gloden
