blueberry sugar free jam

This is a sugar free recipe for jams to use for scones and other cakes as well as for your granola, pancakes, porridge and whatever else you want it for. It is basically just frozen fruit and xylitol and any other spice you like. It is delicious, but the only thing is that, being sugar free, it does not preserve for long. So it will keep in the fridge for a week and then it will start to go off, so my advice is to make small batches as it only takes 10 minutes to make. This recipe is gluten free, dairy free, sugar free, paleo & keto friendly and low carb. But remember that it still contains sugars and carbs from the fruit, so use sparingly, to keep the carb count low.

COOKING & PREPARATION TIME: 10 mins 

INGREDIENTS for 200gr jar:

200gr frozen blueberries or any other berry you like

50gr xylitol

1/4 tspn of any spice you would like: cinnamon, cardamom, all spice, nutmeg, orange zest, lemon zest (I used lemon zest on mine)

  • place the xylitol and frozen blueberries in a small pot
  • bring to boil over high heat and let it simmer till the juice of the berries reduces to 1/4 of the initial volume
  • place in a small sealable jar, let it cool and then keep in the fridge
