
I was trying out this gluten free puff pastry I found in the supermarket by Silly Yak and got to say that while it rolls very well, it is nothing like puff pastry, so you can use it to make a pie, but don’t expect layers and laminations like in puff pastry. Filled the strudel with steamed apples, pinenuts and sultanas!
PREPARATION & COOKING TIME: 1 hour
INGREDIENTS for 6 generous slices:
1 pack of Silly Yak puff pastry
750gr apples (6-8 depending on size)
30gr pinenuts
20gr xylithol
100gr sultanas
- peel apples, remove core and cut each quarter into 3 pieces and place apples on a steamer and steam for 5 minutes. they still need to be firm and not cooked and make sure they do not touch or absorb any water or the pastry will become soggy
- in the meantime roll out the puff pastry into a rectangle 30cm x 40cm
- once the apples have cooled down, place apples on the rolled out pastry, top with sultanas and pinenuts
- wet your finger and run it on the edges of the pastry, keep on wetting the finger and run it through the edges
- roll the pastry and seal the edges and tuck the edges in
- I tend to brush coconut milk on top instead of eggs and then sprinkle the xylitol on top
- cook in oven for 40-45 minutes
- cool down then cut into 6 equal slices and serve
