
I love apple pies and they are one of our favourites desserts. In this recipe I have used my gluten free short crust pastry and then steamed the apples for 3 minutes, so that they start to become soft. Then you cover the bottom of the short crust layer with ground almonds so you don’t get a soggy bottom. I also use sweet apples, so I don’t have to add any sugar in the recipe. You can serve with cream, ice cream or custard as you wish.
COOKING & PREPARATION TIME: 1 hour
INGREDIENTS for 6 portions:
400gr short crust pastry
8 bred burn or gala apples, peeled and each quarter cut into 3 pieces
2 tablespoons ground almonds
- preheat oven at 375F/ 190C
- place the cut apples on a steamer (make sure the apples do not touch any water at any time, but just steam) and steam for 2-3 minutes, then remove from heat and let them cool
- take pastry out of the fridge and work with your hands. Initially it will be all crumbly, but then it will form into a ball
- cut the pastry into a 2/3 and 1/3 pieces
- roll up the pastry in between cling film that you sprinkled with gluten free flour
- roll the 2/3 piece so that it fits a 18x24cm baking tray that you lined with oil
- using the bottom part of the cling film, place the pastry on the tray
- distribute the ground almond on top of the pastry
- the top the pastry with the apples
- roll up the 1/3 pastry so that it seals the baking tray
- with a fork you can press down on the double layer of pastry
- with a knife prick the top of the crust a few times, to allow steam to come out
- place in oven for 45 min
- serve hot with cream, coconut yoghurt, custard or ice cream (not included in nutritional values)
