
OMG! These muffins are amazing! I made this apple muffins by chance as I ran out of courgetees, that I normally use to make muffins with and only had 3 apples in the house (that had seen better days!!). Honestly, if you try this recipe you will never go back!! Absolutely delicious!
PREPARATION & COOKING TIME: 40mins
INGREDIENTS FOR 9 MUFFINS:
200gr apples, grated
110ml sunflower oil
50gr xylitol
1 banana, smashed
150gr self raising gluten free flour
50gr almond flour
2 tspn baking powder
2 eggs, beaten or 2 flax eggs for vegans (2 tbsp ground flax seeds in 6 tbsp water)
1 teaspoon xanthan gum
- preheat oven at 190C / 350F
- mix together the oil, banana and the eggs/ vegan eggs with a whisker, for 1-2 mins
- add the grated apples and xylitol. mix together
- in the meantime combine the flours, baking powder and xanthan gum and mix well with a spatula
- now add the dry ingredients to the wet ingredients and mix until combined
- line with muffin papers a muffin tray
- I personally weigh the mixture at 80gr per muffin, but you can just spoon the mixture between the 9 muffin cases
- place in oven and cook for 25-27 minutes or until a wooden skewer comes out clean from the middle of the muffin
- leave to cool on a wire
- enjoy it!!
