This is a very easy to make cake which has no flour, only ground almonds, butter and eggs. I steam the apples before hand so that the cake cooks faster and the apples do not get too soggy. So try it out and let me know what you think.
PREPARATION & COOKING TIME: 45min
INGREDIENTS FOR 6 LARGE SLICES:
500gr apples, peeled and cut into quarters then in 3 pieces each quarter
110gr butter or margarine, room temperature
110gr ground almonds
45gr xylitol
2 eggs, beaten or 2 flax eggs (2 tablespoons ground flax seeds in 6 tablespoons water)
- preheat oven at 350F/ 175C
- if you are making the vegan version, prepare the flax eggs by combining the ground flax seeds with the water and set aside for 7 mins
- steam the apples for 3 mins, then set aside to cool down
- in the mean time prepare the topping, by beating the butter/margerine with a whisk until fluffy and then adding the eggs slowly or the flax eggs
- incorporate the eggs well into the mixture and then add the xylitol and the ground almonds
- oil well a 1lb tin loaf
- place the apples at the bottom and then top with the almond mixture and distribute evenly
- cook in oven for 35mins or until golden
